Sometimes I think we tend to overthink or over complicate healthy eating. One of our favorite things in our home is grilled veggies. There are so many reasons to love them. They are fresh, they are colorful, they have great flavor, you can spice them up with different seasonings and marinades, they are low calorie, they over tons of vitamins and nutrients, they are easy to cook and prepare and of course THEY TASTE GOOD!
Because are lives are so busy, it is defiantly a repeat offender in our home, but for some reason we really don’t get tired of them! Last night was one of those nights for us, we rushed home from the office, we had to take and pick up from two soccer practices, get home-work done for two kiddos and we still needed to make sure we got our evening workout in. It was so nice to have a tasty and filling meal at the end of the day to help fuel our bodies!
- Red Bell Pepper
- Green Bell Pepper
- Baby Portabella Mushrooms
- Purple Onion
- Olive Oil
- Salt and Pepper
Wash all the produce. Slice your Zucchini and Squash into rounds and chop your Bell Peppers and Onion into large chunks. Place all veggies onto wooden or meal skewers (you will need to soak the wooden skewers in water so they do not burn). Drizzle with a little Olive Oil, season with salt and pepper and grill for 15 minutes or until veggies are tender. ENJOY!
