Shrimp zucchini linguine

Ingredients:

1 lb shrimp
2 medium zucchini – cut into noodles with mandolin or spiralizer
1/2 cup mushrooms
2 cloves garlic
1/4 cup white wine
2 tbsp olive oil
2 tbsp lemon juice
1 tsp crushed red peppers
chopped parsley for garnish

Directions:

Use a large skillet. Over medium- low heart add olive oil and heat for 1 minute. Add garlic and crushed red pepper and cook for 1 minute. Then add shrimp to the pan and cook until they are cooked through and pink on all sides. Season the shrimp with salt and pepper and use a slotted spoon and remove from pan and set aside. Leaving any liquid in the pan. Now increase the heat to medium and add white wine and lemon juice. Scrap the brown bits from the bottom of the pan and cook the wine and lemon juice together, for 2 minutes. Add the zucchini noodles and mushrooms. Stir and cook for 2 minutes. Return the shrimp to the pan toss, combine and let cook for 1 minute. Season with salt, pepper and garnish with parsley and enjoy!
